What's for dinner tonight?

I just made some baked portobello mushrooms, sliced zucchini and roasted asparagus with a slice of mozzarella melted over it. I used a marinade for the mushrooms and zucchini with 2parts soy, 1 part olive oil, a little ginger and garlic. I could market this stuff! I only made enough for lunch but have a sneaky suspicion I will make more for dinner tonight. That way I get to enjoy a glass of wine with it as well.
I make the same, I add sea salt and crushed red pepper flakes to mine. Also for Bok Choy

Well the cheese sounds good. Oh, and the glass of wine.

My wife won’t eat mushrooms either, ‘they taste like dirt’. She says the asparagus smells like pee, and won’t even try the zucchini. I’ve given up on trying to get some nutrition in her... too bad I’ve cream isn’t healthy, she really likes the stuff!

The soy sauce adds more salt than my high blood pressure needs allready. I like the stuff, but it’s not good for me. The ginger was a new try for me, but added a good flavor. Speaking of, there was a worldwide nutrition study just done, and the number one bad thing we all eat was way too much salt. Surprisingly it concluded that eating bad foods killed less people than people not eating nutritious food.

My wife is on this eating healthy kick. She has a soy allergy so she replaced our soy sauce with liquid aminos. I think the brand name is Bragg's. It's supposed to be a healthier alternative to regular soy sauce with less salt. I like it just as much or maybe even more than soy sauce.
