This last pic shows my struggling zucchini . . . I am still getting, but has had to be cut back severely. Just trying to keep them nursed during the heat and humidity levels right now. Looking forward to the end of August when I can replant some spring items and also that fall garden. July and Aug are the challenging months around d here so all y'all who were jealous of my garden pics back in May still waiting for their produce to come in or the snow to thaw. . . this is my world during g the hot summer no the. . . beans, beans and more beans. Welcome to the great south.

About the only thing I did today was make ice cream with the strawberries from the garden blended with store bought bananas. Not a productive day though the stomach says otherwise.
It's good to have a down day once in a while. The body and mind need it more and more as I start getting older! Starting this business has really been cutting into my time for everything else now. I'm not complaining as it's a really good thing, but miss the ability to say screw it, I'm staying in bed for two more hours!

I am going to try to can 2 more cases of pickles, a couple jars of okra and a couple jars of tomatoes today. The tomatoes are producing really well now at least so I might get enough canned up for winter now. Berries are producing every three days enough to pick. I already have enough blackberries to make 10 more gallons of wine with it! I'm going to try to pick the onions today, if I can find them in all the weeds that is! With the heat I will be glad for a little break from everything for a few weeks here.

Agree 100%. We should all take some time off occasionally to kick back and enjoy life. It's hard though when you have animals and so much to do. I bought a jet boat a couple of months ago and have only had it in the water one time. I may take a day off this week and take the boat down to the river and go fishing. At least that's my plan. The wife comes home next week so I need to get a couple of projects finished first. There's always something to do.
 
With all my smack talking to hunny about tractors. . . and he had to come pull me out. :oops: Turn around is fair play. ;) Went to pick up a load of mulch and my front tires go into one of the small ditches he has dug to drain my goat pasture. Sad thing is, i knew better than try to tackle it from that side. . . oh well, won't do that one again. Building up rows today hopefully before the rain starts. Think I better go picking first then do the row work. That way I can do some shelling during the rains. Also have some tomatoes & peppers that need to go into the dehydrator. Enough of a break, I'm going back out.
 
I should go out now, but decided to say screw it and am done for the night. I have apples ripe now, along with more blackberries, blueberries, okra and tomatoes. I will start early in the morning I guess. I am looking forwards to the first fresh apple pie of the season. I still have 3cases of quart jars fillled with last seasons apples, so will just eat them fresh from this load. I canned the first three pints of hot okra with that last batch of pickles the other day, and am looking forward to stocking up on a bunch of them this season. I have enough tomatoes to can a batch of sauce tomorrow too. I'm glad the grapes have a way to go before there ready to pick.
 
I've been focusing on pest control around the garden lately. The chipmunks are digging around the plants and eating the fruit. Set out several traps for them. Another problem with the chipmunks is they attract the rattlesnakes to the area. Last evening while I was sitting outside enjoying a cold one, the dogs alerted me to a rattler about 30 feet away. I took it's head and buried it and added it's rattle to my collection. Later I walked through the garden and heard another one. By then it was too dark to see it so I slowly backed off.

If you like fried, you can slice & put them on a plate, nuke for just about 3 minutes or so then dip them in a flour / cornstarch mixture, lay on cookie sheet s lined with parchment and stick in freezer till set. Then vacuum seal or ziplock. When ready to use, fry up frozen. If you like them with an egg wash you can do that too before the flour mixture. Its an option.

My squash and zucchini i cut in about 3/4" pieces, place on a pan, coat them in olive oil and season with salt, pepper and garlic. Sprinkle on parmasan cheese and bake in oven for 20 minutes or so. We never have any left over.

I can never eat as much as I get out of the garden so always looking for ways to preserve. I like mine baked that way too. :) Add in a little garlic eggplant and tomato. Oh yeah. .
