1 tsp. baking powder = 1/4 tsp. baking soda + 1/2 tsp. cream tartar + 1/4 tsp. cornstarch
1 tsp. baking powder = 1/3 tsp. baking soda + 1/2 tsp. cream tartar
1 cup butter = 1 cup shortening + 1/2 tsp. salt
1 tbsp. oil = 1 tbsp. melted shortening (or lard)
1 cup corn syrup = 1 cup honey = 1 cup sugar + 1/2 cup of the liquid used in the recipe
1 cup buttermilk = 1 cup milk + 1 tbsp. vinegar (or lemon juice)
1 cup nonfat milk = 1/3 cup nonfat dry milk + 1 cup water
1 cup whole milk = 1/3 cup nonfat dry milk + 1 cup water + 2 tbsp. melted butter
1 cup whole milk = 1/2 cup evaporated milk + 1/2 cup water
1 cup sugar = 1 cup corn syrup (decrease recipe liquid by 1/4 cup)
1 cup sugar = 1 cup honey (decrease recipe liquid by 1/4 cup)
1 oz. unsweetened chocolate = 3 tbsp. cocoa + 1 tbsp. shortening


I know not everyone thought about stocking during this Coronavirus and had to make a mad dash to try to get stocked up at the last minute and maybe some items had been over looked. These are ingredients most of us would have on hand for substitution when you can't find milk or butter at the store. Here it is a hit and miss for milk and butter. Maybe this will help.
 
Real good to see these subs again, I do all the baking here. Breakfasts with omeletts, pancakes, sausages, biscuits and waffles are also my duty. Helena does the big cooking and I finish the salads and such. Lots of fun elbowing each other in the kitchen and having a laugh. Both my kids can cook, my daughterand grand daughter can bake but my son is kinda hanging back with the baking thing. Thanks again, already copied it into a document on the laptop...

Thanks, these are very hand for when my kitchen is fully stocked. I tend to focus on a few essentials, rather than having every little thing, so that's most of the time. But I get what I use most and learn to get by with it. This list may allow me a little more creativity and variety.
 
Just to add a few
Sweetened condenced milk = 1c dry milk+ 2/3c sugar + 1/3c boiling water+ 3tbsp soft butter blend well store in cool place
1tbsp cornstarch= 2 tbsp flour
1c Cake flour= 1c less 2 tbsp regular flour
1c self rising flour= 1c all purpose flour + 1tsp baking powder+ 1/2 tsp salt
1c ketchup= 1c tomato sauce+ 1/2c sugar+ 2tbsp vinegar
1c honey= 3/4c sugar 1/4c water
1 egg= 1tsp baking soda to 5 eggs will be the equivalent of 6 eggs.
1c light cream = 7/8c milk + 3tbsp butter
1c heavy cream = 3/4c milk + 1/3c butter
1c sour cream = 1c evaporated milk+ 1tbsp vinegar
1c whole milk= 1/2c evaporated milk+ 1/2c water+ 1c powdered milk+ 2 1/2tsp margarine

Thanks again for the info to all the donors here. Love to try some of them and surprise the wife if some things run out and need subs....GP
