I picked my carrot bed today, and decided to break out the pressure cooker for the first time. Up to now I've only done water bath canning. My first five jars of carrots are cooling down in the canner now, and I'll do five more later tonight. Well, it wasn't so bad, and I didn't explode, so over all I'm pretty excited for my first try. I did learn something though. Don't buy a cheap pressure canner! I got one at Fred's, which is kind of like dollar general, and it was something like 40 bucks. Well it works fine, but I could only fit five pint jars in it. Hardly seems economical to do all that prep for just five jars at a time. I'll be lucky to fit 4 quarts at a time in it. By the way, anyone know if it's necessary to submerge the jars completely when using the pressure canner. With quarts I don't thing I'll have the space to fill completely. I'm looking forwards to reading the post above bob, thanks for all the great research your sharing!
